Meal Pinning Monday



[What is Meal Pinning Monday?]
MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking. 

Monday- Fajita Burgers with Chili Cumin Fries

Tuesday- Leftovers

Wednesday - Enchilada Pasta Casserole

Thursday - Leftovers

Friday - Leftovers (Jeremy's fending for himself while I am at the Beth Moore Simulcast)

Saturday - I will still be at the simulcast. Youth Night, which means J and a lot of teenagers playing all night and eating Raising Cane's. 

Sunday - Bacon, Ranch, and Chicken Mac & Cheese





Surprisingly these recipes are a much lighter version than they appear to me. The first one is obviously a "clean" recipe for those of you interested in that. While the other two are carb heavy they are much lighter versions and if you can I would use whole wheat pasta. Needless to say I would be overjoyed to use WW pasta...but Jeremy hates the taste and texture of it, so our compromise if Smart Taste. Which is much lower calorie if that is a concern of yours. 

For breakfast this week I am living up the healthy version of a McMuffin and having a huge salad with Laughing Cow cheese, whole wheat crackers, and yogurt for lunch. I bought oranges, grapes, and pears for snacks. Hopefully those will hold me over, hormones always seem to overtake my meal plans. 

I don't know about y'all but marriage and hormones make it so much harder to eat super clean.
