Meal Pinning Monday

It's hard to believe this is the last week before Mardi Gras break. However, what's going to be harder to believe is the stretch without a break after that. 

In other news, the virus has left the building. I couldn't have washed another thing, we had no choice but to get over it. Literally, had I washed one more load of puke junk I would have exploded and died. 

True story. 

Now, dinner plans, because if I don't write it down I'll forget it and then who knows how the groceries in the fridge will pan out. 



[What is Meal Pinning Monday?]

MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking.

Monday - Breakfast - sautéed some Chicken & Apple sausage and added in eggs, cheddar cheese, and spinach. (hashtag low carb day)

Tuesday - Grilled Chicken and Roasted Cauliflower with Nutritional Yeast


Wednesday - Cube Steak with Sautéed Purple Cabbage with Onions & Roasted Potatoes again... because it was so good I need it another week. I just seasoned the steak with cajun seasoning and pepper by the way. The cabbage was super easy, just a head of cabbage, a diced onion, salt, pepper, garlic, a few tbsp butter, and Worcestershire sauce. I cooked it with the lid on for about 30 minutes on medium heat. 

Thursday - leftovers

Friday - Chicken Stir Fry - I got a bottle of the new P.F. Changs Home Menu Sauce and am busting it out. I'll share about it next week. 

Saturday - eating out

Sunday - BBQ Chicken Salad - see also, grilled chicken with Sweet Baby Rays and a bag chopped salad. So fancy.
