Meal Planning Monday

I'm making it another simple week at our house. Which is made even better by the Mardi Gras break. 



[What is Meal Pinning Monday?]

MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking.

Monday - Pulled Pork and Coleslaw - using the premade pulled Pork from Sam's & making coleslaw with my Primal Kitchen mayo and a few other ingredients later today. 

Tuesday - leftovers

Wednesday - Going out for lunch so probably a grilled chicken salad

Thursday - Waffles 

You guys, these are the best pancakes/waffles EVER. They’re like delicious banana bread and pancakes in one — the best of both worlds. They’re our family’s fave and they go FAST. 100 Days of Real Food’s Banana Pancakes {or waffles}. Mix together 2 cups flour — I use Bob Red Mill’s one to one gf mix for this. You could use whole wheat or white flour too — 2 tsp baking powder, 1.5 tsp baking soda, 1/2 tsp salt. Set aside. In a separate bowl beat together 1 TBS honey, 2 eggs lightly beaten, 1 & 3/4 cups milk of your choice, 2 TBS melted butter and 2 smashed over ripe bananas. Make a hole in your dry mix and gently fold your wet mix into it. Gently mix. Fry up in coconut oil and top with real maple syrup and fresh fruit! YOU’RE WELCOME! Friday - Spaghetti & Meatballs - I've got frozen meatballs and some premade sauce, everything was already in this house so what could possible make an easier meal.
