the great spaghetti debate

One of the biggest disagreements (not arguments) we have had has been over how to make spaghetti. I am the type to add more veggies than meat and pasta...and Jeremy wants the original with marinara sauce, lots of meat, and actual spaghetti noodles. I personally don't like spaghetti noodles. Other shapes are easier to eat. 


Well since Jeremy is down for Spring Break he decided he wanted spaghetti. For real spaghetti, not his wife's version. So because of this I made real marinara sauce. 


Here's what I used:
Parsley Flakes
Small Tomato Paste
Fire Roasted Tomatoes (just because they add good flavor)
Tomato Puree 28 oz
Italian Diced Tomatoes
Basil
Oregano
Sugar
Salt & Pepper
1 yellow onion
1/2 bell pepper
3 cloves garlic


What I did
I started off by sauteing the onion and bell pepper until it was caramelized. Then add everything else. After cooking for a few minutes I pulled out my Rival hand blender and pureed it to a slightly chunky consistency. After that I let it simmer for about 30 minutes and tasted it every so often to adjust the seasoning. I didn't exactly measure anything so I would just say season to your liking. While this was cooking I browned ground beef and boiled the pasta. After the beef was done I added it to the sauce to let it simmer with it for about 10 minutes.

Q & A

1. Why did you start blogging?
I started blogging because I was getting married and all of my bridesmaids lived out of state or miles away from me. I didn't get to have to usual experience of everyone shopping for a gown with me, or hunting for bridesmaids dresses with me. Since the girls lived so far away I decided to put everything for the wedding on here so they could see and comment, and give me ideas. Instead it turned into hometown friends reading and commenting, and created minor hype when I posted a video of us practicing swing dancing for our first dance. It was fun, and I think actually made some the guests interested to see what the final product was going to look like.

2. What is your most embarrassing moment?
The first day of 6th grade, might not have been the worst, but it has scared the mess out of me. For starter I had on the cutest blue jean dress to come out of the 90s, and I also had the meanest group of "friends". It was lunch time and mean girl said "Hey Emily come sit by me!" so I went and sat down. All the time not knowing she had placed the top to her chocolate pudding face up on purpose so I would sit in it. I spent the rest of the day looking like I had pooped my pants. What's bad is that I was such a nice trusting kid, events like that are what I blame my cynicism on. I know that girl probably doesn't remember doing it to me, but I'd love to being it up to her one day.

3. Nicknames?
I could make this list go on forever! My whole life my family has called me Emma or Em. Teachers called me Em, and one called me Auntie Em(from Wizard of Oz I think). For several years my Dad called me Tyrone just to tick me off, he thought it was hilarious. In high school I was called Cater, my last name because I was involved in football (water girl) and worked out with a lot of the football players. 5th period Civics gave everyone nicknames and I became Bobbin' Weave because my hair bounced when I walked. There were a whole host of odd things in college. Now as a teacher I have several kids (both years) that have dubbed me Mamma B. I was accidentally called grandma this year, but since it was a one time occurrence I won't count it! Ha!  {My sister Laura on the other hand has never had a actual nickname--odd}

4. What is your all time favorite pet?
Sorry Ellie, but rabbits. My Dad use to breed them and Easter was our big time of the year. People really liked to buy ours because they were so tame. Laura and I spent many hours of our childhood playing with bunnies, they didn't get tame playing with each other. I had one that would sleep on her back in my lap and was litter box trained. She lived inside too. Sadly she died the first time I let her play outside alone and she saw a cat. The neighbor saw the whole thing, Sweet Pea literally saw the cat, had a heat attack and fell over. End of Sweet Pea. 

5. What is your most memorable vacation?
I would say honeymoon because I loved Epcot, but the best one was skiing in Keystone, Colorado. I would die if I could live there.

6. If you could only eat one food for the rest of your life what would it be?
I asked Jeremy this the other day and he said Chinese, but I don't agree. I would have to go with Japanese or Thai. I love sushi, must have sushi

7. If you could live anywhere, in any time period where and when would it be? 
England in the Middle Ages. Not the black plague infested version, but the movie version. I love the clothing, how they talk, and what all the building looks like. I would also have to be of nobility. But that is more fantasy land than real life "Run the giant rat is chasing you down the sewage covered street!" Wait, considering my problems with mice in my classroom that is close to real life haha!

1.   Fridays are       the best day of the week for a teacher. Most of the day is spent testing-which means absolute silence. Plus kids are in a decent mood since tomorrow is Saturday  .

2.    The Beatles, shopping, sushi, pretty flowers, and being at that weight were I "feel" skinny (you know what I am talking about, some days feel skinny)    make me terribly happy.

3.  Something that inspires me is     books, Southern Living, blogs, and design & food shows  .

4.  If I had the day off today I would     be extremely lazy, go shopping for new clothes, and get some frozen yogurt  .

5.  If I had to put a label on my home decor style, I would say my style is    Southern, straight out of Southern Living southern. I love antiques, but I also like the newer furniture that is made to look slightly southern city. I am dying for this chair from Pier 1 but I will wait to post a pic tomorrow on Saturday 7  .

6.  Concerning politics I would say I'm       I care, I don't care. I care enough. I also vote for who I think is best and tend to not follow party lines. But all politicians tend to suck at some point. Some just show it sooner than others    .

7.  I'd like to go to       Puerto Rico      so I could       meet my Dad's side of the family and travel to my Granny Aida's hometown. Because of her and my Puerto Rican heritage I have always been intrigued by all things Hispanic. For instance-our genealogy was traced back far enough to find out we came to Puerto Rico from Spain during the Spanish Revolution .

A rat dropped from the ceiling, into the light fixture, an ran from one end of the room to the other.

I was in the middle of teaching.

I was then on the other side of the room freaking out, kids were freaking out, the para was freaking out.

Massive teaching fail.

FITBF/Saturday 7

Since I am blog slacking this week...and really slacking on WIWW, I am doing a two for one post: Fill in the Blank Friday & my own Saturday 7. First up FITBF.

1.   My favorite daily responsibility is,       taking roll and sending it to the office. I use it as a bribe. The kid who sits the quietist and reads gets to take it down. Silence, score!   .

2.  My least favorite daily responsibility is,    unloading the dishwasher. I avoid it at all costs, I hate dishes    .

3.  My favorite cuisine to eat when going out is    Thai, I love thai food and sushi   .

4.  My favorite cuisine to prepare at home is     Mexican .

5.  Andy Warhol said that everyone is famous for 15 minutes. My claim to fame is     that it apparently hasn't happened yet  .

6.  If I could have 3 wishes I would wish      for my dream home, to not have to work and only do it because I wanted to and not because I need money to pay bills, and for an awesome wardrobe   .

7.  My biggest pet peeve is       cracking knuckles, and for some reason I got a class full of knuckle crackers this year. Eek!

Hodge Podge

1. Unlike my previous post said. I got a call and an email Wednesday and was told the girl who was offered the job turned it down for a job closer to home. So they were then offering it to me! Score! Now I have a job, and we have an apartment. All I need now is for the next 5 weeks to wrap up so I can move. 
2. I bought my cap, hood, and gown Thursday. I was excited to get to graduate wearing a Master's hood,but no one warned me that the dern thing cost $76! I nearly fainted. Now all I need to do is order my Kappa Delta Pi cords and see  if I get honors cords for having a 3.5.
3. When I initially asked off to go to my interview my superior (who made me resign in March) told me I was wasting my time because I wouldn't get the job. Well I showed her. When I got the email I was in the hall and jumping around acting like a nut with another teacher, she walked out of her office and asked what the commotion was about. I told her I got the job, and she said "Oh good for you" (very smug) and walked back in her office. Needless to say she hasn't harassed me anymore this week. 
4. My skin in breaking out like I am a teenager again. I have done a face mask, toothpaste, GermX(for the rubbing alcohol at work when I had no other options), and Clinique acne medicine. Nothing is working! I need help.
5. I have been munching on this Burrito Bowl all week. Best recipe ever! Super easy and light, but really filling. 
6. I would like to die and go to Ann Taylor Loft. I am in love with every look on this page.
7. Who else is excited about Pioneer Woman getting her own Food Network show? I have loved Food Network since the early 90's when Mrs. Field's had her own show, and I still watch Two Fat Ladies on Cooking Channel. So my love of Pioneer Woman combining with my food show love has me over excited with foodie-ness!

update

Well the search never ends. But this still contains good news. The principal I interviewed with yesterday called me tonight, she said I didn't get the job but they had a hard time deciding between me and someone else(out of 11). She also asked if she could hold onto my number, and that she would call if someone quit...because you just never know what will happen over the summer. She also said the interview team was really impressed with me.

So this is bitter sweet. My name could get around to another principal in the area, good. I didn't get the job, bitter. But I could get another position there, good.

I really feel like the person they hired probably had math teaching experience, that is the only subject I haven't taught yet. This falls under the category of God won't give me more than I can handle. I am not a Math person, I could teach it, but I wouldn't enjoy it.

This one only the first interview, and it is still April. Something else will come up.

Saturday 7-just a hodge podge and a question

 First a little update since I have been blog MIA this week.

I am not going to lie, this was a tough week. The kind where you call your husband sobbing and you've probably worried the poor thing half to death. But the past few months have been though. And they will only get tougher, until I find a job and am comfortable with settling down in South LA. We found an apartment, with all tile PTL! It cost more than I'd like to pay, but apparently everything is more expensive down there. The new place even has a little-almost-fenced-in backyard, all we need to do is figure some way to block the entrance and we can just kick the pups out when they need to go potty! Whoo hoo for easy, these girls are accustomed to a doggie door. I have an interview Monday-which is 5 1/2 hours away from where I am now. Major kinks were thrown my way to try and prevent me from going (as you may have seen on Twitter-which included being told that there was no point in me going because I wouldn't get the job anyway, and yes I emailed a higher up about that.) but I am going anyway....just going to cut it real close on time. Yuck. And have to drive back the same day because I can't get off work. That is 11 hours of driving! Yikes! So y'all say a little prayer for me Monday, for the driving and for the interview. I need this job just like Jeremy is going to need to eat this summer when I get there. Poor boy can't be in graduate school and starving because he wife can't find a job.

Now for what this post was about to begin with:
7 things that make me happy
{since this week has sucked a big one}

1. Several weeks ago I found some Tea Tree Oil Cleansing Bar at Sallys. It has been a absolute miracle soap. My skin tends to not heal fast, if I get a cut it hangs around for ages. Now this one one is TMI, but sometimes my back breaks out from my conditioner. Tree Tea Oil is supposed to help skin heal faster, and this soap has shown that to be very true. It has done amazing things for my skin, and I actually need to go buy more today. Here is a link to it. I get the GVP brand from Sally's, it is supposed to be compared to the Paul Mitchell Tree Tea Cleansing Bar.

2. I absolute love Canine Carry Outs. Needless to say the girls love them too. They are a soft dog treat...that will convince my two to actively participate in tricks or bribe them out from under a bed. The thing I like most about them is that they are soft. I can break them into several pieces and get the dogs to do several tricks using just one. This is great for two little piglet dachshunds who don't need treats anyway. These aren't the healthiest or fanciest of dog treats, but for someone on a budget who doesn't want to just hand their dog a huge snack it works. 

3. I reacently found Garnier Skin Renew anti-sun damage moisturizer when I was hunting for face lotion at Rite Aid. I just love it! I use to worship the tanning beds and it was starting to show after the wedding in 2009. Immediately after the wedding I started noticing how dry my skin was and how it was beginning to prematurely wrinkle. Crows feet! Yuck. I have always used moisturizer on my face, but that is when I started using the anti-aging stuff. I really like what Garnier has done for my skin, and I really like that this particular moisturizer is supposed to reverse the effects of sun damage. It also doesn't hurt that it is SPF 28

4. I'll go ahead and throw this in, DVR. Yes, I argued that it was a waste of money when we got it, but now I am addicted to it. I like that I no longer have to pay attention to what time a show comes on, I have DVRed my life away.

5. I eat greek yogurt like it is going off the market soon. I especially love Fage with honey. But considering the price recently jumped up...I am now consuming Dannon. All this inflation is killing my cheap self!

6. iPad 2. Hands down best birthday present ever.

7. Okay I am using #7 in search of help! I need something to wear to my interview and have no idea what to wear. I though about one outfit, but I don't want to drive 5 1/2 hrs in it. I looked at these skinny trousers in grey or black, I don't have any black trousers. I also have this top from Target, but don't know if it is appropriate, however I think it looks dressy on. I would hate to drive in a button down and wrinkle  it up, or risks someone seeing me change into it in the parking lot. So I need your help big time ladies, give me interview outfit suggestions!

man-free/cow-free? and other randomness

I am not going to lie. I ate like I was about to get the lethal injection over Spring Break. I swear I gained 5lbs. So I came back this week knowing there was not a single meat free recipe on the face of the earth that would make me happy. I was coveting some chicken like a crazy woman.  So I decided to make taco salads with ground turkey and this balsamic grilled chicken goodness.  Hence the cow-free title. I am shall only consume things with two legs or less until June. Ha! 


Anyway back to death by chicken. I started cooking the dish up...wait I need to back track further. I was reading the recipe and was really debating on not doing the pasta in it. I have carb overloaded. Time to de-carb. But when I got to WalMart it was calling my name, so I put it in the buggy. Then I got home to make the dish and though "I'll just save that pasta for a rainy day" but was possessed by the pasta monster and cooked that mess up. That then made me want to just freeze it so I couldn't enjoy the penne pasta goodness. That was going well until I slipped and all the other ingredients fell into the pot.


Thats my story and I'm sticking to it.


I was going to eat just the chicken and veggies...but I just can't tell the difference between chicken and penne pasta. Like I said, that's my story...don't judge. 


To make matters worse I have been so hongry {thats what we call really hungry people} that I have eaten a bowl and a half two nights in a row. And not little bowls my dear, big bowls. 


I also decided not to do carbs for breakfast, but somehow came home with the makings of my healthy McMuffins


At least I don't eat in my sleep.

In other news, it took one adult female and two dachshunds 17 minutes to walk/run around the block. Well it actually went like this:


Round the block 1: Ellie makes us walk super slow...then stops in front of the house and sits down refusing to go for round two.


Round 2: Maddie and I walk, run, then walk while panting back to the house. But at least Maddie will run. 


Wanna know what Ellie and Joshua have in common, they walk about the same speed...and get distracted every five feet. I am almost positive the baby would walk farther than Ellie though.

1.   The best prank I ever pulled was       Last year we wrapped one of the servers {of the restaurant J worked at}tables in foil. Everything from silverware to napkins were wrapped in foil...the whole table was silver  .

2.  The best prank ever pulled on me was   when my mini van was moved to another part of the high school campus. I used to leave my keys in the car in hopes of a escaped prisoner would take it...but a football player moved it to the back of the school. Made me late for work   .

3.  A day without     some form of quiet me time      is a day wasted.

4.  The most important things in life are     God, family, education, & my nutty dachshunds.

5.  I dream of     being settled down, having daughters, traveling like we would like to, owning a home  .

6.  I dread       this whole looking for a teaching job and moving while parishes here aren't really hiring. I am so afraid of not getting a job and not being able to pay bills   .

7.  A discovery I made this week was       two adults, three pillows, and one twin bed do not work. I have had a headache for two days    .
