Paleo Chocolate

I'm a chocolate person, I also like to eat clean the majority of the time. 

Those two don't tend to go together, especially if you look at what's in a Hershey's Special Dark Chocolate bar. 

Last week weekend I decided to tackle the issue and make something that soothed my chocolate craving without the junk or guilt. 


My favorite thing about this recipe is that it is easily doubled and tripled. You can add any nut/dried fruit combo, or even fill them if you'd like. 

It's completely open for change as long as you know what you're craving. 

This particular time I wanted almonds and cranberries, my favorite nut and dried fruit combo. The first time I made them I used almonds, raisins, and apricot. 


Paleo Chocolate

make 12 mini muffin cups or 6 regular size
Ingredients::
1/4 cup natural cocoa powder
1/4 cup coconut oil, melted
1/4 cup raw honey

Directions::
Combine melted coconut oil, cocoa powder, and honey in a bowl. Divide evenly between 12 mini muffin cups, or 6 regular size muffin cups. Top with fruit and nuts, or fill with almond butter. Chill in the refrigerator until firm.
