Meal Pinning Monday #87

I've decided to start something new this week for Meal Pinning Monday. Instead of just linking up meal plans I'd love for you to link up your recipes! I'll pin them to my boards and feature the recipes I cook the following week on Meal Pinning Monday.

[What is Meal Pinning Monday?]
MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking.

I'm going out of town to Women of Faith in Houston this weekend, so Jeremy is going to be left to fend for himself. Not that he can't, he often reminds me I don't have to cook so much. Anyway, that's why this is a short meal plan week.

Sunday (today) - Tortellini Salad with Hot Tomato Oil and French Bread



I've wanted to make these two recipes forever, especially since I rarely make pasta anymore and rarely eat bread. Sunday's are always so crazy so Saturday night I just had to get Jeremy to agree that I could cook and we wouldn't go out. Y'all I'm not kidding you when I say I've been dying to make the Hot Tomato Oil since I saw it on Food Network. 


Monday - Sausage, Sweet Potatoes, Bell Pepper, and Onion Skillet. (no recipe just tossing it together. 

Tuesday - Buffalo Chicken Lettuce Wraps

Wednesday - Slow Cooker Chicken Tikka Masala


Thursday - Leaving Town:)
Friday - WOF
Saturday - Coming back late so who knows. 

Sunday - Pizza Bread with Marinara Sauce

I'll probably split this recipe in half and make a white flour version for Jeremy and a whole wheat one for me. He isn't a fan of the texture of homemade whole wheat bread. I did white flour Sunday... so that's all the white I can take for one week:)

Breakfast  - Green Smoothie 
(1 c almond milk, 1/2 c Keifer, 1 tbsp chia seeds, 1/2 c frozen tropical fruit blend, 1/2 banana)

Lunch - Hummus, Feta, & Spinach on Lavash with Carrot & Cucumber Sticks
I haven't made my hummus recipe since Jeremy and I were engaged (the man doesn't like hummus) and I've got a massive hankering for it. If I get it just right I may post it... but like I said it's been almost 5 years.
