[What is Meal Pinning Monday?]
MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking. 

Monday - Taco Pasta (that was never made last week)


Tueaday - Grilled Chicken and stir fry veggies

Wednesday - Thanksgiving Dinner @ church // Hashbrown Casserole


Thursday - Grilled Chicken with Roasted Green Beans

Friday - Leftover Taco Pasta

Saturday - Chicken Parmesan with Spaghetti Squash

Sunday - Eating out

Not a super recipe heavy week. I am mainly trying to alternate high carb days by throwing in lean meat and veggies in between, we just so happen to be stockpiled in chicken so chicken in our lean meat of choice these days. I feel like low carb options are hard to come by. I've been reading up on the Paleo Diet, but it is so restrictive that I can't commit full on to the idea. I do like some of the recipes and the basic concept...but any thing that outlaws coffee, beans, and wheat is not my friend. I am all about limiting wheat and trying other alternatives, but the restrictions would land me at Waffle House at 3am in search of syrup drenched waffles. If y'all have any ideas for lower carb meals or links to such things let me know! I love getting comments about recipes. For instance Tammy let know about a copy-cat Cracker Barrell Pumpkin Custard that I am trying out this week:)
