Gluten Free Pastalaya with Mountain High Organics

 For Celiac Awareness Month I am super excited to partner with Mountain High Organics. We have used their gluten free pastas for several years and I am always impressed with the quality. But not only quality... if you've bought gluten free before you know not all are created alike and texture is different between brands. 


The biggest kicker for me, outside of being gluten free and organic, is the texture of Mountain High's pasta. Some pasta varieties tend to fall apart or have a grainy mouth feel, this one is so well made that I would bet you can't tell a difference between this penne and a regular gluten penne. 




I was so hoping one of our favorite college kids who happens to be gluten intolerant could come by last night for dinner to taste test the pasta, but they had all headed back home after church. While we don't have to worry about any intolerance in our own household, we have had students who do. 


This makes such a difference when we all get together to hang out or for a game night, being gluten intolerant puts many stipulations on where you can order food from or what you can eat at a get-together. 


I really love that this pasta is made in a dedicated gluten-free facility (so no worries for customers), and certified by the Gluten Intolerance Group. It's also been tested to contain less than 5ppm of gluten. Plus you'll notice the American Masters of Taste Gold Medal endorsement on the front of the box, showing you just how great this product and company are. 


The next time our little group of friends get together I'll be making this pasta dish again for everyone to taste test Mountain High Organics pasta themselves. In fact if you were around the blog several years ago I made this Party Sandwich Pasta for some friends and they loved the taste and texture of dish. 




On to the recipe steps. Y'all forgive my awful lighting. It was a gloomy day of sprinkling rain in South Louisiana yesterday. 


Also, against my blogger judgement, I won't run all through the recipe here and then give it to you again. I just want to give a few pointers before I leave you with the recipe below. 


We are actually working on a church cookbook right now and I am finding my biggest issue with entering my own recipes is that I want to go full blogger and leave massive explanations in the notes sections of each recipe. 😂


So let's get going. 


First off, cut all of your meat up ahead of time. It will make cooking so much faster. This recipe also is only 1/6th of the original, so it is super easy to scale up for a big crowd. 




The recipe calls for Cajun Seasoning. I personally use Cajun Red Head for anything that I want to have a more authentic Cajun flavor. Tony's comes off as more of a house blend seasoning and not super Cajun tasting. But use what you love, I get this particular seasoning at Rouse's grocery store. 




While you're browning your Jimmy Dean and chicken, grab your seasoning blend. I've mentioned seasoning blend in previous recipes over the years and anyone not from the South is always confused. 


It's just simply an onion, bell pepper, celery blend with a bit of parsley added in. You can find it in the frozen foods section here. Another popular brand is Guidry's, it is in the produce section and fresh. 




When you make it to the andouille chopping section of the recipe, after the chicken is removed from the pan. Make sure that your andouille is in a small dice. It is spicy and you really don't want some huge piece of it in your mouth. 


As I mentioned above, this is 1/6th of the original recipe. It's meant to be cooked large scale for a crowd. Because I only make a small batch when I cook, I have a gallon bag labeled "for pastalaya" in the freezer. 


You are going to use the whole package of regular Cajun sausage and chicken, but the Jimmy Dean Hot and the andouille are 1/6th of the package. Because of this I like to go ahead and cut my link and Jimmy Dean package into 1/6ths and freeze for the next time we make this. 




Finding the Cajun sausage you want can be a chore. Ideally I would have gone to a local meat market, but it was Sunday when I finally had time to run out and grab the sausage (Walmart doesn't carry the brand I like) so I headed to a local grocer. The recipe calls for Savoie's, but if you are not in Louisiana you can use Manda or any smoked sausage. Just know, more andouille is not the answer. It adds a different spice and you don't want tons of that in your pasta. 


When slicing the Cajun sausage I just cut it on the diagonal. Nothing tiny, just bite size. 




After browning your meat the bottom of your pan might have built up some browning. When I put my sausage into the pot I just went ahead and added my frozen seasoning blend. The frozen onions let off enough liquid that it deglazed everything easily. 




You'll then add your garlic and cook everything down really well. Notice the swap between camera and phone photos, the lighting was really a pill.




After all of my meat was cooked through, I tossed it back into the pot with all of the liquids. Brought it to a boil and weighed out 1lb of my Mountain High Organics Penne Pasta. Which by the way you can order from their website or even through Amazon. 



Once your pasta is cooked, you are done. 




Pastalaya

1/6th of the original recipe

Ingredients: 

1 lb penne pasta
1/2 bunch green onions, snipped
12 oz seasoning blend
1 tsp minced garlic
2 cups heavy cream
5 tbsp whole milk
1 patty Jimmy Dean Spicy 
1 lb chicken thighs, cut into bite size pieces
1 lb Savoie sausage, sliced
1/6th lb andouille sausage, diced
1 can cream of mushroom soup
1 quart chicken broth
Cajun Red Head Seasoning to taste

Directions: 

Cook Jimmy Dean sausage, breaking into crumbles. Set it aside. Cook diced chicken thighs, season well with Cajun seasoning. Set aside. Brown all other sausage, add in seasoning blend and cook down. Add in garlic and season with Cajun seasoning again, cooking for 2 minutes. Add all meat back into the pot with heavy cream, milk, condensed soup, and broth. Heat to a boil and then cut down to simmer to thicken. Add pasta, cover, and bring to a light boil. Cook according to package directions on pasta. Continue to stir to prevent sticking. Add in your green onions and stir. Serve. 




The original recipe calls for chicken breasts, but honestly I am just not a fan of the texture. So if you are one of the anti dark meat people, just sub in chicken breasts. 


One thing I really like about this is that is has plenty of sauce. There is nothing worse than a dry pasta recipe when it touted to have sauce and you even made the sauce... but the sauce just seemed to vanish in thin air. 


I really hope you give this a try! This is honestly my favorite gluten free pasta brand that I have tried. When we eat this as leftovers for dinner the pasta will still be holding it's shape and not falling absolutely apart like some of the brands on the market.

Lemon and Wild for Eco-Friendly Lunches

It almost feels like a resurgence of the 60's right now with the current food and lifestyle movement. More and more people are aware of what they are eating and the products they are using in their homes.

These adorable sandwich wraps are a chic way to ditch the plastic baggies and dull kitchen paper. Plus... stickers. If I use the parchment I have on hand I'm having to use tape from the office to hold everything in place. This solves that problem.

Diapering Essentials with Huggies

I'll go ahead and admit that the diaper changing station took a lot of precedence over other things as far as organizing went. I just couldn't stand the idea of being knee deep in a dirty diaper and not having what I needed. That's just one of the things that goes with being a first time mommy. The one thing I knew for sure that was going into my changing station were Huggies diapers. 

So the months coming up the delivery I pinned a ton of ways to organize the baby changing station. I finally settled on my own way of doing things, and a year later it as stayed the same tried and true way.


The one product I've come to trust the most has been Huggies.

We are just a Huggies family.

My mother used them on my sister and I. My sister used them for my nephew, and now I'm using them for Harrison.

If I'm being frank, I tried about 4 brands when Harrison first came home from the hospital and this is the only one I wanted to stick with. Issues I had with other popular brands included the infamous blowout, but the hands down worst was that the lining in one brand literally stuck to his little boy parts and I had to peel it off at every change. In my diapering comparisons, Huggies Sung & Dry definitely stops leaks better than the Luvs Super Absorbent.

It was so bad that before I had used up all the other diapers we had that I literally spent every diaper change that my husband was home lamenting the fact that once these were gone we were only every using Huggies diapers again.


Once that was all settled I could sleep well knowing that the baby was fast asleep in his Huggies with up to 12 hours of triple layer protection to stop leaks and Mama wasn't going to be getting up to change a diaper in the middle of the night.

Except for that time we had the virus.

Luckily our beloved Huggies Snug & Dry kept the blowouts to a minimum.


Aside from our Huggies diaper must-have, our changing station has grown to include a few things that I've deemed must haves, especially with a little boy: 
  • Petroleum Jelly
  • a few types of light lotion
  • a thick cream for dry skin spots
  • good diaper rash ointment
  • teething oil
  • a vapor rub for runny noses
  • Huggies Natural Wipes


I like to keep all my necessities in a rectangular wicker basket on the top of the dresser, and then in the drawer right below I keep a box of wipes. 

A little note on something else I do - I save all my Huggies Rewards points in that drawer until I've got a good handful and then I enter them all in on their website. It's helped me keep better track of where they all are. 

You probably also noticed the wipes warmer, I can't decide how much of a necessity I deem that to be. When we are home over a long break I put wipes in it, and use my drawer of baby wipes to refill it. Otherwise during a regular work week the wipes dry out in the warmer since we don't use as many at home. 

Regardless, it's there and apart of the line-up.

Finding Comfort During Your Period

This happens to be a subject I've been trying to find just the right balance with since 7th grade. 
 
It's also something that has taken more than it's fair share of experimenting, whether it be with things I do or the things I use. 
 
Either way, finding comfort during your period is never an overnight solution. 
 
 
I'm no expert, but here are just a few ways I've managed to make that time of the month slightly more bearable for myself. I feel like I should add - because it does make a difference - I've never taken hormones to control it... so we've got a full out 6 day torture cycle over here. 
 
Like I said though, being au natural with your period means finding ways to help ease the discomfort it brings along. 
 
Of the hippie things I do, here are my two biggies for when the unwanted Aunt Flo shows up for a visit. 
 
 
Staying hydrated is a massive number one in my book! Without proper hydration your muscles don't function properly, leading to cramping much worse than it would otherwise be. 
 
I take 3 approaches to my hydration. First and foremost is giving up caffeine about two days before my period is predicted to start. I've read that the caffeine makes your cramps worse, probably because it naturally is a diuretic. 
 
The last thing we need right now is a diuretic. 
 
Yes, you may be bloated, but water doesn't add to that... at all. In fact it's quite the opposite, your body feels bloated when you aren't getting enough water. 
 
My favorite way to stay hydrated is with my Lemon Chia Fresca recipe. It's what I drink when I'm not drinking water. 
 
Then of course I absolutely have to give into my sweet tooth one really good time during that week. The first day of my period always signifies a trip to get a guilt-ridden shake or my favorite soft serve ice cream mixed with candy. 
 
 
Staying relaxed is my second surviving your period with comfort tip, because when I'm tense the pain my period brings is just worse. 
 
Staying relaxed can happen several different ways, although my favorite for day one is to cuddle up with Ellie in bed and watch our favorite television shows. 
 
Exercise is a great way to ward off period pain. I like to mix up what I do with strength training, cardio (mainly of the dance version), and yoga. My muscles tense up quite a bit the first two days of my period so I try to schedule strength-training days for when I'm not hunched over in pain. 
 
Heavy cardio the first day or so is just too much for me, so when girl time starts the heavy cardio stops. Don't stop moving though; a nice walk is usually just what I need. I like to dial it back a bit, but not completely rid myself of cardio. 
 
The magic pill for me during my period, when it comes to exercise, is yoga. My legs and lower abdomen are where my cramps tend to appear, and a nice gentle yoga routine can usually do the trick to help me relax just enough to stretch out any tense muscles causing the pain.
 
A nice hot detox bath is another great way to find comfort during your period. At home I like to mix equal parts of baking soda and Epsom salt (usually 1/2 cup each) with 3-4 drops of lavender essential oil in my hot bath water to relax. 
 
This last period I got lucky and visited natural hot springs in Puerto Rico, it was amazing! Not exactly something I can do every month, but it was a nice treat. 
 
Lastly, do something you enjoy! I love to paint my nails and find it really relaxing. Find your favorite color and take your time giving yourself the perfect manicure.

Original Balls of Steel happens to be a drink cooler meant to replace ice.


Therefore, it's a match made in my ice disliking drink heaven.

When I was asked to try out the new Suave Professionals Body Care line, I knew of all the products I could review I'd be giving this one a true test.

Y'all know I live with the motto that expensive isn't always better; I think the never-ending years of graduate school have made me believe that. As far as their body line goes, I have stuck only to their unscented lotions.

We were out shopping and within the hour I was itching more than I ever have before, my skin was burning, and I was begging to be taken home so I could shower the horrible stuff off. With that being said, I was incredibly eager to give the new Suave Professionals® Moroccan Infusion Body Care the leg lotion test. If I could stand to use it after shaving my legs and I didn't have to feel the fire ant burn from the scent, or lack of moisture, it was going to be my new favorite.


How did it fair? 

Well it passed the test with flying colors.

Don't Be Afraid to Change Course

Career change.

That's always a biggie.

It seems as though most of the people I knew when we started college didn't graduate in what they started in. After putting in years, semesters, and money into one specific career choice they suddenly change their minds.

I was one of those people, luckily I changed my path before I was stuck knee deep into something. I initially went to school for Psychology and even got my Bachelor's degree in it.
I ran into a huge issue though.

I couldn't mentally fathom what I would be doing for a job with that B.A. that would pay the bills. Jeremy was right behind me in line for graduating, and he actually knew for sure what he wanted to do. Which happened to be a very difficult specialty in Psychology.To make our lives much more comfortable I had to decide what I was going to do and quick.

Just as graduation began to approach in my last semester I ran into a Psychology classmate who decided to swap tracks and get her Master's in Education. On a whim, and I quite seriously mean "on a whim," I went home, applied to the Master's program and signed up for every standardized test they required. To prepare for this I had to take the G.R.E., Praxis I, and yet another Praxis in one insanely rushed month just to meet the application deadline.

Luckily I come from an Education family so I knew this was something I could do, I just wasn't so sure it was something I wanted to do. I pushed ahead anyway with the support and help of my "certified in everything" teaching mother.

Without her I would have struggled and possibly sunk taking classes the alternative route.

By changing the career I had trained for I just didn't know certain lingo that educators use, much less their research. Heck, I'd been in Psychology for 4 years! I made it through though, and graduated with honors I might add.

Something I didn't pull off in my undergraduate courses.

I attribute much of that success to the support I had when I decided to change my career, swapping Psychology out for a class full of children.

Now, five years later, I'm looking to do a slight change again. I've been an upper elementary English Language Arts teacher (Reading for the non-educators) for the past five years, and right now I'm looking to start classes again. Not to add on another Master's.

Nope.

I want to add on another certification that would allow me to be a Special Education teacher. After working very closely with a Special Ed. Inclusion teacher last year, who quickly became a dear friend, I saw what she did daily with select children throughout the school and decided I wanted to do that too. By co-teaching with her I was able to bounce ideas off of another brain, get ideas I wouldn't think of myself, and was allowed the management I needed to run my classroom the way I dreamed I could. I want to give the same individualized help and accommodations I saw her give, and offer ideas and strategies to teachers that they might not have thought of yet.

So this time there will be another set of standardized tests, but I'll have the support of my School Psychology husband and my teacher/assistant principal, overly educated mother. These two should know a thing or two about Special Education, and I'll be picking their brains every step along the way while I make a minor career change that will grant me major satisfaction.

Monster N-Tune Headphones Review & Giveaway

For years I've just used the little in-ear headphones because they were the best quality I could get (without spending a ton). Then recently, I started seeing more and more people wearing larger headphones that looked a lot more like what my husband wears when he plays guitar so I can't hear it. After seeing a good dozen runners at the gym wearing these headphones I seriously became curious! As you can guess, when BlogHer approached me to review a pair of Monster Headphones I was more than happy.
When they showed up at my doorstep in purple... I was beside myself! I love them. Love them! If they were a friend I would take them out for frozen yogurt, love them. Now let's get into why I love these babies so much.
Comfort & Sound Quality - We both like to watch shows on our computers and on our tablets. Sometimes we do it at the same time, the only issue is that I can hear what he is watching with my in-ear headphones. Y'all, I couldn't hear anything else in the room at all! The second thing I noticed, is that my ears never began to hurt from wearing these headphones. You know what I mean about the inside of your ears hurting with in-ear headphones. These are so comfortable I could probably sleep in them, and we all know how I am about my sleep. The sound though, it blew me away. Monster uses N-Tune HD and I kid you not, it sounded like I was in a mini movie theater with the Monster Headphones on. The sound quality is the best I've ever had in a pair of headphones. Passive Noise Isolation - Several times this past weekend Jeremy walked through the bedroom (I went into TV series marathon mode after putting my headphones on.) and had to repeat himself after I removed the headphones, because I couldn't hear him. N-Tune HD's noise isolation can not be beat. If you know someone who flies frequently I highly suggest buying these headphones for them for Christmas. I literally sat in the living room during the football game with my Monster headphones on just to see if I could hear it. Barely, I could barely hear it. Once I turned on my T.V. show though, I couldn't hear anything that wasn't coming straight through my headphones.
Durability - I tend to tear things up, not that I want to, but myself and headphones just don't get alone well. Honestly though, most cords aren't made well. All I have to do it unplug it from the elliptical at the gym a few times and I've ripped the wires out. So the past few days I put Monster to the test, I plugged them into the headphone wire eating elliptical I run on ever morning. Like I suspected, the cord is made so well that they held up to what otherwise would be certain headphone death. Seriously, as soon as your touch a Monster headphone cord you'll notice it's not like others you've used. Plus I haven't been able to tangle it up like I typically do, that alone makes it a winner. Unlike every pair of headphones I owned in the 90's, you don't have to worry that someone with a large head will break them. Monster headphones are built to be super durable, you can even twist them around without breaking. Gosh I love technology. Even if I don't understand it half the time. ControlTalk Universal - In-line mic with controls for Android, tablets, & other devices. I haven't used this much, but I have loved the button attached to the cord that allows you to pause and play your music or video.

Do you want to know something else I love? 

There are ports on both sides of the headphone that allows you to choose which side you want to plug in your cord. 

Not that important when purchasing, but I really liked the feature. 

Here's something else to think of, with the holidays coming up this would be a great gift for anyone you know who uses headphones often. Whether they enjoy listening to music, or watching movies on their computer or tablet, the quality & price of Monster headphones makes this a great gift.
