Fruity Marshmallow Treats

This past week my mother and I took the kids and ventured up to Pawhuska, OK to visit the Pioneer Woman Mercantile. She grabbed a ton of fun treats from the coffee car, the Spicy Cowgirl Coffee & Chicken & Waffles Salt Water Taffy being my favorite, however ranking clearly in the top 3 was their marshmallow treats.

I polished mine off the last 3 hours of the trip back slowly picking apart the contents and savoring every white chocolate drizzled bite. 


There was nothing so special about how they were made, basic recipe clearly. 

The fun came in with the cereal additions and the classic PW addition of mini marshmallows to a marshmallow treat. 

Not to mention white chocolate takes this to a whole new taste level for me. 

Trust me, make this and taste it with and without the chocolate. Totally different depth of marshmallow treat flavor.

There was no better excuse than a Sunday School pool party to whip up a batch of these and make my husband love them just as much as I do. 

Not to mention my friend's teenage brother. 

He was obsessed. 

Which only validated my need to share the recipe here. 

So if you can't make the super long drive to the Merc, make these treats and whip up a batch of the Spicy Cowgirl Coffee (recipe on Food Network) and pretend your car is covered in dust that will likely never wash off.

Fruity Marshmallow Treats
adapted from the wonderfulness at The Mercantile
makes 2 9x13 pans

Ingredients:
8 tbsp unsalted butter
dash of salt
2 10 oz bags of white marshmallows
1 10 oz bag of fruity colored mini marshmallows
6 cups of Rice Krispie Cereal
6 cups of Fruity Pebbles Cereal
melted white chocolate for drizzling (or vanilla Candiquick will work)
sprinkles

Directions:
You can make this on of two ways, either mix everything together, or break it into two batches. I personally did two so that it was easier to divide into two pans. Alternately you can just make one batch. 

1. Melt 4 tbsp of butter in a large pan, once melted add in one 10 oz bag of marshmallows and stir with a wooden spoon until melted

2. Remove from the heat and continue to stir. While stirring pour in 3 cups of Rice Krispie & 3 cups of Fruity Pebbles cereal. Add in half of the 10 oz bag of colored mini marshmallows and stir to evenly distribute. Pour mixture into a buttered 9x13 baking dish. Top with sprinkles and drizzle over melted white chocolate. 

3. Repeat the process with the other bag of marshmallows and remaining ingredients, I suggest making two whole pans. They'll go quick.
