Meal Pinning Monday

It's back to work and reality today. The break was really nice while it lasted, but let's be honest my waistline will appreciate being back at work. 

As long as no one buys a king cake. 

Oh and in case you forgot, this week I'm cooking from the Pioneer Woman Dinnertime cookbook. Page numbers are by the recipes incase you don't want to deal with Pinterest. I also added how I'm lowing the carb count for myself in each recipe. 



[What is Meal Pinning Monday?]

MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking.

Monday - Breakfast Quesadilla pg 21 - using low carb tortillas & no potatoes for myself. 


Tuesday - Buffalo Chicken Salad pg 59 - this is low carb on it's own and needs no changing around. 


Wednesday - Swedish Meatballs pg 106 - I'm cutting a corner here and using frozen meatballs. Major time saver. I'll also be eating this over zucchini noodles and using xanthan gum in place of flour as a thickener. 


Thursday - Leftovers

Friday - Beef with Snow Peas pg 163 - With this recipe I'm again replacing any thickener with xanthan gum, serving over cauliflower rice for myself, and lowering the sugar content with stevia. Swerve is a great sub for sugar if you can get your hands on it. 


Saturday - Leftovers & Vanilla Pudding pg 340 - I can't decide if I'm having weekend fun here and following the recipe yet. But if I make changes I'll be sure to post it to Insta Stories and you can see just what I do and if it works out. I find that messing with a pudding can go terribly wrong.
