High Five for Friday

It's officially our last Friday before we move. Next week all five of my pics will probably pertain to moving! 


1. In an effort to pack everything I can I've been drinking smoothies like a mad woman. I also made soup, but that Williams Sonoma Lime Soup doesn't taste quite as good with regular chicken as it does with rotisserie chicken. Anyway, my recent smoothie obsession is 1/2 c Simply Orange Juice, 1/2 c almond milk, 1 tsp flaxseed mill, 1/2 scoop vanilla protein powder, frozen banana, and 1/2 frozen mango.

2. This week we made a run to the Salvation Army to drop off stuff, Jeremy turned it into a book hunt. I was against the idea until I came across the updated Abs Diet. I was obsessed with the first edition 10 years ago, it is what changed my entire eating lifestyle and started the clean eating obsession. I can't wait to have time to reread the updated version and refresh my memory!

3. Packing. Oh packing. This week has been a big packing week...and Sunday is going to be the Superbowl of packing days.

4. Explain to me how Rudy can rationalize having an accident, granted he is only 7 months and bladdar control is still shaky when we excite him, but he is too smart to still pee places. For instance, last night he was sitting in his dog bed chewing a bone with this bear in the crate with him. He was completely across the room and I asked him to bring me the bear. Just to see if he would. Well the little sucker put down his bone and picked up the bear and brought it right to me. You may be a bad puppy Rudy and chew us out of house and home, but you are far to smart.

5. The heat, oh the Louisiana heat. I was dying for ice cream yesterday and Jeremy wanted coffee, so we compromised. I got the Cookie Crumble Frap, it was good but I think I'll stick to the Caramel when I get one. Which by the way I realized after ordering it that I haven't had a frap since finals week my freshmen year of college... I was on my way to my A & P final. So um, 9 years.

Merge Camp Recap

Last week I was partially missing, you may not have noticed because I scheduled all my posts... but as far as social media went I had dropped off the earth. 

Why is that you ask?

We took our youth group to Memphis for Merge Missions Camp. In the event you have some say in where your youth group goes next year, Jeremy and I would both highly suggest this camp. 


Growing up I always attended the Lifeway Fuge camps, Merge was on the same level as Fuge but with better food and way better prices. For our small group it was definitely worth what we paid.

I really can't say enough good things about FBC Millington and how well they put on Merge this year, their volunteer staff for camp was amazing.

So what does your day at this camp look like?

Well first thing everyone had breakfast then the kids and leaders split up for separate devotional sessions. Afterwards we packed up and headed out to our mission sites where we worked until mid afternoon before heading back to the camp for a few hours of free time. Next we had our little youth group planning meeting to recap what happened on our mission site that day and to discuss what we wanted to do the next day. Immediately after we had dinner, then worship, Merge games, and they capped it off with more free time.


I was worried our group wouldn't be into the games, they aren't all the super gamey type, but everyone had a blast. Plus with all of the great team games it gave everyone a chance to do a bit of team building and our small group got a chance to become a tight knit one and developed several inside jokes. 

I love anything though that gives students a chance to cheer each other on, it seriously builds their bonds with each other. 

Our girls are so diverse that on the first night in the room, while they were all just having random conversations, the other girls leader and I forced a little impromptu game of questions and answers on them much like what I do in my classroom at the beginning of the year. Afterwards, Sara and I looked at each other with a slight "surprise it worked" looked and realized a little controlled conversation where everyone had a chance to lead what we were talking about for a few minutes so that everyone felt heard was just what they needed. 

Young girls tend to either not talk at all and others dominate the conversation, so I always like to give everyone a chance to be heard. 

I'm convinced the boys had it easier, girls are a handful. 

Camp is hard on my teacher personality type anyway, I like to get 8 hours of sleep every night and follow rules like crazy. Little girls on the other hand like to stay up late and see what they can get away with bending. 

I'd go back with this group next year in a heart beat though! 


So one of the big things at camp was a dance called The Interlude, the students loved it and danced around like crazy every time it came on. When we got back they wanted to make their own video, so this past weekend I videoed them and Jeremy did the edits. It isn't the best video quality ever, but they had fun.

Behind the Blog

With our move occurring in just a few days I thought I'd end my 2 years at the Gloria Street apartment with a little behind the blog and let y'all in on how I do things here.

I've spent many days photographing things for this blog in the weirdest places and got quite a handful of odd looks from neighbors who were probably wondering why I was photographing the clean eating pancakes outside in my nightclothes.

Why don't I take pictures inside like a sane person?

Well, our apartment could lovingly be called a dungeon. It's dark in here y'all. Unless you want to see food shot under night vision I will have to stand outside like a weirdo waiting on the perfect light so my less than professional camera can get a decent shot.


All of my outdoor photos you see with the brick background... this is where it happens. 

When we moved two years ago I had to toss my ancient grill that had rusted out and my Pop gave me his grill. This baby started off looking much better, but after two years of living outdoors without any sort of awning it took a beating. 

So that one little slice of wood is where I take food photos at. 

Now the next house, it has much better lighting, great walls and floors... so this girl can now shoot indoors and not stand outside in her pajamas like she's crazy! 


The grill isn't always my only place to shoot.

Sometimes light and the size of the product allows me to shoot in my bathroom. I should go back through and link up to every photo taken in here so you could get a good laugh.

For instance, my marshmallow icing and cupcake that did pretty well on Pinterest last year was shot facing the wall beside the toilet and I was sitting on the side of the tub.

Glamorous people, it's just straight glamour.


You may recall a post about several bloggers and myself interning for 5 Minutes for Mom, well we have meetings twice a week online. I really should just start a "where I filmed this week" series for kicks and giggles, but this is where I typically hope on the video conference. 

Places on the "Where has Emily video conferenced?" list include but are not limited to::
  • CeCe's Pizza (youth cramp traveling)
  • The car
  • A parking lot
  • Jeremy's office
  • Near any source of available light in our ridiculous apartment

This apartment is so dark, even with every light turned on, that I have to turn the big chair in the living room around to face the window, pull back the curtains, and open the blinds. 

I'm about 90% sure the neighbor that thought I was nuts for photographing a rug in front of my car now thinks I'm the nosy neighbor from Bewitched. 

But it's the only way to get decent light. 

And now I'm that creepy neighbor. 


Last but not least, here is a little look into our current reality. While this isn't "behind the blog" so much... it is directly behind my desk where I usually blog.

I really want to just scratch out every improving on the Lowe's boxes so that is reads "Lowe's Never Stop Packing" and give it the tag line "our boxes are so big you'll just keep running into them."

TMI side note: as you can see these boxes are in the guest room where my closet is... I walked past them naked and bumped into them. It was basically like slow dancing with Edward Scissor Hands, I had paper cuts where no human should ever have a paper cut. I think I halfway sliced off a boob.

Also notice the unpacked bag from youth camp, the workout equipment that isn't being used right now because there are too many boxes and I can't stand in front of the TV, the empty closet hence I am only wearing workout clothes until we unpack, and all the laundry drying on the guest bed because I'm ghetto like that.

Yes, that was a run-on like no other, but it's how I would say it if we were talking.

So there you have it, where I blog... but only for the rest of the week.

If you have a crazy desire to pack come on over. I have a few loads of stuff to take to Salvation Army and am currently holding up every item and giving it the "how many times have I used you in the past two years" test.

I have grown a lot as a blogger the past two years, and with just a month of internship with the fabulous Susan and all the great interns at 5 Minutes for Mom I will only learn more in the coming months. I just hope that I can quickly get on track after the move, let's face it I'm having trouble this week after a week of being MIA for Merge camp in Memphis.

Meal Pinning Monday

With moving in only a week we are officially on the "clean out the pantry" menu. Plus with Jeremy directing VBS this week and I'm helping in Missons (fitting after a week of missions camp with the youth group) so dinner will just be whatever the kids are snacking on. 

Can we also talk about how weird it is to be touching a computer after a week of not looking at my blog...everything last week was scheduled way in advance. I almost don't even know how to do this anymore! 

I recently wrote an article for 5 Minutes for Mom (I'm an intern there right now!) called Using Pinterest to Meal Plan, I'd love for y'all to check it out.

MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers. If you don't pin your recipes feel free to just share what you are cooking.

Let's make this easy, I'll just give you my breakfast and lunch plans...the rest is unknown and will involve snacking. Then again after a week of eating what the kids ate I might resort to eating only celery and hummus at dinner.

May Birchbox Review

I waited a little longer than last time to write my review of the May Birchbox than I did for April, then again I was kind of disappointed about the box. Which is why it took longer to review, I just couldn't make my mind up about the products. 

Definitely not their best box to date.

This will be my last Birchbox review for a few months, I'll start back up in October. I decided to take a few months off while we are transitioning jobs and moving this summer. 
COOLA | Classic face SPF 30 Cucumber Moisturizer for face. Mineral sunblock infused with organic antiaging ingredients like evening primrose extract and borage seed oil. $21.95

I wasn't very impressed, especially for the price. It's a SPF moisturizer. I have one that I like for much cheaper, while it isn't as strong of an SPF it works fine. Unless you are seriously into organic this isn't worth $21. 

Beauty Protector | Protect & Damage. Great for all hair types, this nourishing elixir locks in color, adds shine, and instantly detangles. $21.95

This is the one product in the box that I liked. It smells great, moisturizes and detangles well without leaving you with a greasy feeling. I even used it on Ellie one day and it made her smell amazing and left her dry coat super soft. I actually plan to buy this one. 

Sumita | Color Contrast Eyeliner. Inspired by traditional Indian formulas, this velvety liner glides on easily and lasts for hours. Set of 4 mini pencils, $21

Not impressed. It is a lot like my BareMinerals eyeliner that I'm currently disappointed in. I prefer the twist up, never dull pencils. The way eyeliner pencils are being made now does not lend itself to sharpening easy, plus it is too thick and the actual liner isn't dense enough to go on without it bending and smearing. It stayed on well, and works great. I'd but it if it came in a self sharpening format. 

Joie | Folle de Joie eau de parfum. For its debut scent, the chic fashion brand created this carefree mix of mandarin, rose, and sandalwood. Full-size $98

This perfume smells great and lasts a long time, I just can't wear it because of my allergies. Not to mention I'd die before I spent that much on a spray. I'm cheap. 

Tweezerman | Matchbox Itty Bitty Nail Files. Keep these cute mini files in your purse to fix mani mishaps. Full-size, $5

While I like Tweezerman products, I just can't stand the feel of touch this type of file. It's cute, but I like my full size file I carry around that has a handle. 

Like I said, I was a little disappointed with this box. I'm happy to know it isn't just me after reading several other blogger reviews. This just wasn't their best box.

Tangy Cabbage Coleslaw

Sometimes I really surprise myself with the foods I like as an adult, take cabbage for instance, randomly became a big fan in adulthood. 

The things you can do with it is just nuts, two of my favorites being fried and in this particular coleslaw. 


It was during out first summer as a married couple that I began to make coleslaw this way, before then it was just in the traditional sense, with a very heavy celery seed presence. In this recipe though it takes a whole other twist with coarse ground mustard and apple cider vinegar.

Plus making it myself gave me a chance to get rid of the mayo. Praise the good Lord for Greek yogurt, the happiest day of my life was in college and I came across it. Nothings makes a better sub for anything creamy than plain nonfat Greek yogurt. Plus it is higher in protein... and not mayo. Lest we forget it isn't nasty mayo.

I'll put it on a sandwich, but honestly it is just kind of gross.


While I still use mayo, mustard and vinegar are my condiment favorites, aside from ketchup. The two combined give this coleslaw a great tangy flavor that doesn't deviate far from its Southern counterpart, but definitely create a brighter flavor than plain ole mayo alone offers.

Oh vinegar, nothing made me love you more than going to England as a teenager and getting to douse fries in it! Yum.

Tangy Cabbage Coleslaw::
Ingredients
1 cup plain Greek yogurt
1/4 cup coarse ground mustard
1/4 coconut palm sugar (or dark brown sugar)
2 medium garlic cloves minced
3 tbsp apple cider vinegar
1 tsp celery seeds
2 bags of 16 oz pre-shredded 3 color coleslaw mix
3 green onions, chopped
salt & pepper to taste

Directions
Whisk first 6 ingredients, through celery seed, in a large bowl. Taste, adjusting vinegar if needed. Mix in coleslaw mix and green onion. Salt and pepper to taste. Serve chilled.

***Depending on what I have in the house I will sometimes sub in fat free sour cream, or use half yogurt and half fat free mayo. If you want a really creamy slaw only use half the slaw mix, or double your dressing. 


This slaw is a great healthy alternative to its mayo filled counterpart. It also keeps great for days and is always a crowd pleaser.

High Five 4 Friday

It's finally Friday and I'm linking up with Lauren Elizabeth for High 5 for Friday!

I'd be saying yay for Friday except the fact that there is a lot of packing left to be done and we leave for youth camp in two days. Holy Packing Fail Batman! But lets review this week and forget the packing failures.


1. This past Saturday we took the littlest Cater to the zoo. Y'all it is far to hot to be doing such an adventure without getting soaking wet in the splash park then walking around. It was fun to take him despite the heat considering we hadn't been since his momma was just barely older than he is now.

2. We've been working on getting water cut on as well as other living needs. Jeremy has been in charge of calling and swapping things around while I've been in charge of staring at boxes and randomly packing things with no real need or order. We seriously move in two weeks, and one of those weeks we won't even be in the state. This is all moving way to fast for my brain.

3. Along with hot summer heat the also common summer nausea has set in. I randomly get nauseous between being in the car, being way to hot, and being on the computer...so Sea Bands are my best friend. I highly suggest them over ever taking the pill form of anti nausea meds.

4. Jeremy let me go play golf with the guys for the first time, I started out okay for myself but the harder it rained the worse I got. Then it really rained, like soaked through to your undies rained, and we had to high tail it to the car. Fun but wet. We went back yesterday and I couldn't hit the ball to save my life.

5. Green Apple Icees are okay, but someone really needs to bring back the Pink Lemonade flavor I always got in high school. Sadly I think I've hit a spot in this heat filled LA summer that nothing can soothe, not even an Icee.

4th Anniversay Recap :: Cafe Du Monde & Emeril's

I wish I could say we went out and did something crazy for our anniversary, I can't. With the upcoming move that Jeremy has compared to hemorrhaging money, decided to play it low key.

Also with this being our last anniversary living so close to New Orleans I thought we should head into town and try out a restaurant I've wanted to sink my teeth into for well over a decade... nearly two. 

So after a little convincing of Jeremy, I made our lunch reservations at Emeril's. 


I highly suggest you make lunch reservations at places if you are looking to check it out, get a good taste of what they are about, and not blow your whole wallet on one meal. I also wasn't in the mood to spend the whole day in the city so lunch was a good way to get in and out quickly.

Our first stop of the day was Cafe Du Monde, and in true Emily & Jeremy style we hit up one in Kenner so we could skip the crowds in the Quarter. I just wanted my frozen Cafe Au Lait, no reason to pay for parking.


Parking by Emeril's is tricky, just give in and take the valet if you go. I just love the first pic in this set, the sky was absolutely beautiful and it wasn't so crazy hot in NOLA just yet.

Now for Emeril's food. I have wanted to come here for years and just now got around to it. He was one of the first chefs I really like and made recipes from, Emeril Live was probably my favorite show growing up.


To start we got the BBQ Shrinp for an app. It was divine, I could have eaten a dozen of those little rosemary biscuits. Jeremy got the salmon with an andouille hash, I'm not a salmon gal but I can tell you that the hash was divine.

Speaking of rosemary, my plant has bit the dust. I need to look up how to plant from a stem so I can regrow this poor plant.


I on the other hand was super indecisive about what I wanted and the server suggest the chicken & waffles out of the long list of ideas I thew at him. I just couldn't make up my mind to save my life, lucky for me it was a great choice.

For dessert we got the Banana Cream Pie, if you go you have got to get this. I'm not a big banana cream pie person, but this is the dessert they are known for. It was absolutely heavenly, I would love to know what was in it to make at home.

Clean Eating Green Pancakes


I love carbs. Pancakes are heavenly.

You may have seen my original clean pancake post, but after awhile I decided I wasn't getting enough veggies in my breakfast and started playing with the recipe. I stuck with the base, but just played like crazy from that point.


Clean Eating Green Pancakes 
serves 1
Ingredients::
1 banana
2 eggs
1/2 tsp vanilla
dash of cinnamon
1 cup fresh spinach
1 tbsp milled flaxseed
Optional add-ins - protein powder, peanut butter or PB2, chia seed. Try not to add liquid or it will make them super thin and very hard to flip over. 

Directions :: 
Combine all ingredients in a blender and blend until frothy and combined well. You could also use an immersion blender. Pour (roughly) 1/4 cup of mixture into a greased skillet heated to medium. Flip when the top bubbles and begins to look dry. Continue until the pancake batter is used up. It should make about 6-7 pancakes. 


While I have only a cup listed in the ingredients, I tend to add more spinach. Especially if the bananas are ripe, it then needs a drier ingredient to thicken the batter up. I literally just pack in spinach, blend, add in more and keep going until I get a consistency that I like.

If you want to add peanut butter I would suggest the powdered PB2, if you are doing a Whole 30 or Paleo just toss in some almond butter and add more spinach to thicken it up. You really can't taste the spinach at all, it's like a Green Monster smoothie without the almond milk and eggs added in.

High 5 for Friday

I couldn't be happier that it's Friday, then again everyday might as well be Friday for the next few weeks since school is out. Then again I almost want to retract that statement since the Civic Center when I can walk/run in the AC for free is closed on the weekends.

But let's get on to what was great about this week.


1. I got my Influenster Spring Fever Voxbox in and have been testing it out for a few days now. Any box that comes in the mail containing a Tastykake is to die for though.

2. Sunday we got together with some friends and had crawfish, it was an adventure getting it... but it was so worth it. It was my first and last little mini crab boiled crustaceans for the season. There really is nothing better than time spent with close friends where you can just be yourself and have fun.

3. 5 Minutes for Mom announced their interns for the summer! Guess what? I managed to get a spot, how, I'll never know. I am super excited to learn more about everything blog world this summer. We are already a few meetings in and I feel like my brain could burst with information. What does that mean for this blog? Only that it could get better haha. I will be busting my butt to keep up here while getting my work done over at 5 Minutes for Mom in the next three months.

4. Ellie pulled her not-so-usual-but-she-does-it-to-prove-a-point stunt yesterday. Time apparently lapsed in my head and the dogs had been out playing for an hour or so. They usually scratch or bark at the back door when they want in or out, and I hadn't heard a peep so I completely forgot and was sucked further into the show Arrested Development. Next thing I know I hear Ellie barking at the front door. Realize this, to get to our front door from the backyard home girl had to get through a sugarcane field. She definitely looked the part once I opened the door for her, she was covered in mud. She just pranced her happy self in and plopped down under the kitchen table. Where was Rudy in this scenario?  Still in the backyard. That little skunk has no desire to explore, while Ellie is constantly looking to see what she can get into. Funny thing is she never runs off, she just comes to the front door when she gets out.

5. Jeremy randomly decided he wanted to go play golf with me this week. Since it's never happened I quit cooking dinner and jumped in the car quite happily. Funny thing is I haven't touched a club in 6 years and the guys I hung out with in college never let me play a full game with them. With that I hit about one more than Jeremy at every hole, score! He seriously thought I'd be hitting it all over creation and turns out my drive is actually pretty straight, and slightly better than his. He can putt way better than I can though, that's where he beat me. Now I definitely know what out go to date will be for a long time, I'd much rather be outside doing something that at the movies or just eating any day.

Cantaloupe Carrot Orange Juice

A few weeks ago I got it in my head that I wanted orange juice, not so much the flavor of orange, just the color. It took two weeks of thumping and squeezing melons at the local mega mart type grocery store before something satisfied me enough to spend money on it. 

Honestly I felt a bit like Goldie Locks poking melons. 

The first week out they were too hard. Second week, the cantaloupes were so soft I shoved my finger straight through one. Finally, finally I found one worth taking home. 


Cantaloupe Carrot Orange Juice
serves 2

Ingredients::
3 carrots
1 large naval orange
3/4 of a half a cantaloupe

Directions::
Unless you have organic carrots peel them, and cut off the stem. Cut up cantaloupe removing the skin, as well as skim the orange leaving as much of the pith as possible. Juice all ingredients and serve over ice.


I know there is a lot of fuss about saving juice for later, it loses nutrients. Shoot me, I like to over juice and save it. I just can't find time to juice every morning and still make it to work on time. Granted fresh juice tastes much better, but juice is better than no juice.

The container you see the extra juice in is a Synergy Kombucha bottle and it filled up about halfway after filling a mason jar completely. While a lot of readers have shared their dislike for the "juicing for later" idea I really like the size of the Kombucha bottles for that purpose, in case you have some laying around that you need to use.

This turned out to be a really yummy refreshing juice, it reminded me of the fruit slushes a friend's dad from Central America use to make. It's a great summer drink, especially while melons are in season.

I can't wait to get my hands on a good watermelon to toss in the juicer.

[What is Meal Pinning Monday?]
MPM is how I meal plan for our little family. I once spent a lot of time searching the web and my recipe books hunting for new recipes and ideas for what to cook every week. Then, Pinterest came along and made meal planning much easier for me. Every weekend I look over what I have pinned the prior week and decide what I would like to cook and make my grocery list from these recipes. MPM came about as a way to share what I am cooking, and to also see what others are cooking every week to hopefully get even more dinner ideas from other bloggers.
