I need blog topic suggestions. I am totally void of topics. So here goes the bullet points.

  • I have my last Fall observation on Wednesday. Hopefully it goes well...my homeroom has yet to be observed. Massive downside is that I have duty on Wednesday and I rarely get back into my room at 7:30. Which is my observation time.
  • We went to Texas last weekend and I thought I was just having allergy problems...well a week later and I have a sinus infection. I have so much pressure my teeth hurt. {sad face}
  • 3 days until we leave for Deeper Still in Birmingham, AL. Big freaking yay!
  • Yay for the now 4 day work week.
  • 3 weeks till Christmas break. I haven't bought a single present and I have BARELY decorated. Something tells me I probably won't. For some reason I am just not into it this year. 
  • We should be hearing something from Nicholls this week...hopefully good.
  • Due to the sinus crud I have been unable to Zumba. I am totally feeling it and all the junk I ate last week. 
  • I want the Zumba dvd for Christmas.
  • Is anyone else in the "I hate everything in my closet" phase. Maybe it is cause I am 10lbs heavier than my closet wants me to be. 
  • Ok enough of the bullet points. I'm going to hunt down my saline spray and try to get this gunk out of my head. TMI?

1.   Black Friday is       my favorite holiday of the year. But I didn't get to celebrate this year due to the face we are waiting to hear if Jer gets in the School Psychology program at Nicholls State, gotta save that dough   .

2.  Christmas shopping this year will include   a girl gift for our family Christmas, and who knows what. I really want a nice camera but it all depends on our "Christmas Bonus"...if it even exists  .

3.  Holiday shopping makes me       happy     .

4.  This year my Christmas list will include   a Canon Rebel, that fab chair I saw{that I won't get}, Toms shoes, and clothes   .

5.  Bargain hunter, or full price shopper?      Bargin! hence the love of Black Friday .

6.  The best and worst things about shopping is        having to buy gifts for the work secret santa mess, I hate hate that. Best thing would be shopping with my Mom like I do every year    .

7.  Online shopper or in-person shopper?       In-person! I have feet that range from 9-10 shoe size...I like to be there in person     .

1.   My Thanksgiving plans this year will include       heading over to the out-laws for the weekend, then coming home and making sweet potato gnocchi for the hubs and doing Zumba, then finally heading home to cook like a maniac with my Moma!  .

2.  My favorite Thanksgiving was   When I was in junior high and made my first side dish, I though it sucked and wouldn't wat it, but Nanny said she loved it  .

3.  My signature Thanksgiving dish is       I never make the same thing twice, except that divine Regina Charboneau dressing we made last year. Mom always makes hashbrown casserole for Laura though     .

4.  My favorite Thanksgiving food is    the rolls, except last year when me and Mom royally ruined them  .

5.  Thanksgiving free association!      Nanny's turkey and "orange junk", and of course craberry sauce. .

6.  Thansgiving is        yet another excuse to eat and hang out with my family. Now it is also the day I bribe Jeremy into taking a Christmas pic    .

7.  I am thankful for       my job, family, church family, Heart 2 Home sisters and Mom's, Jeremy....everything!     .

conversations.

Last night Jeremy and I fell asleep super early...like 8:30pm early. Needless to say we woke up at 10:30pm nearly burning alive. The kind of burning alive that feels like someone set the bed on fire and we both jumped up at the same time. We rearranged and went back to sleep. This morning a conversation followed...that totally proves anything my mother has ever told anyone about sleeping with me.


Jer: How'd you sleep last night?
Me: Good, you?
Jer: Really good after you turned the air conditioner on.
Me: I never turned it on, it was 64 in the house all night. You just cooled off when I moved to the other side of the bed. 
Jer: I thought you turned the air on.
Me: I turned my fan on and moved to the cold side. You just moved away from me. {haha}


Lesson learned: I am apparently so hot natured when I sleep that moving a few inches away from me causes people to think the air conditioner turned on...in a 64 degree house. 


So far the only thing on earth that likes to sleep next to me is Maddie. Ellie even moves to the foot of the bed after I fall asleep. 


Mother always said sleeping with me is like sleeping in a furnace.

{fill in the blank friday} - a day late and a dollar short

1.   The most spontaneous thing I've ever done was       going to Dallas then to Galveston during Hurricane Katrina without either set of our parentals permission. Considering our hometown was out of gas I understand their freak out, but we were in no danger   .

2.  The best gift I've ever received was    I honestly can't remember presents for anything. The one birthday present I do remember fondly was when my Nanny and Pop bought me a giant jar of Spicy Beans and Pickled Okra when I was in college. Best present ever, they know me so well  .

3.  A time that I was truly and genuinely surprised was       Laura being pregnany. Seriously that is the only time I've been surprised, I tend to watch the bank account around the holiday and snoop through closets constantly. You can't hide anything from me   .

4.  I can't leave the house without        my phone and chapstick  .

5.  My favorite day of the week is      Saturday    because      I usually have zero commitments and I love having nothing to do   .

6.  Something that can always make me laugh is        looking at peopleofwalmart.com with my sister or watching stand up, oh how I love stand-up comedy    .

7.  My perfect day would include       sleep in, wake up to a clean house with nothing to do except watch my T.V. shows without the guilt of not doing homework. Then I would eat myself into a coma without gaining weight       .

30 Day Blogger Challenge- Day 28 & 29

Day 28
{something that stresses you out}


Let's make this straight and to the point. 5th graders stress me out. The Praxis PLT. Unannounced room visits by the principal. In-laws. Riding in the car with certain people. Finals week. Holidays. Not knowing if Jeremy will get into graduate school at Nicholas this time{we both want it to happen so bad}.


That about sums it up.

I wish that Jeremy will get into grad school at Nicholas this semester. 
I wish that "santa" will bring me a SLR camera.
I wish kids would listen.
I also wish people would raise their kids to not be rude snots who asked questions like "why do you have wrinkles?"
I wish Maddie would go outside at night and not be a baby about it.
I wish we could have gone to Germany this year, and I hope we can go with the group next year.
I wish there was a mission opportunity that worked with out schedule that Jer and I could do together. We have both done things separate but never as a married couple.
I wish people would get....I'll leave this on a happy note and leave that one off....and world peace.

I know you've heard me talk a lot about the demonic weenie dogs that call children. But here is my favorite picture I've ever taken of them. The only one in fact where they have ever actually sat in the same place and looked at the camera at the same time. 


Ellie is the soft-wire hair on the left and Maddie is the plain ole red daschund on the right. They have the funniest personalities I have ever seen in dogs. Ellie got upset about the rain the other night and insisted she get in bed with us. If Maddie sees you pick up anything larger than a purse she assumes we are going to Vidalia. Maddie loves listening to Jer play guitar, Ellie would rather be alone on her chair than associate with the rest of humanity. Ellie also use to love walking...now she would rather have her legs cut off, where Maddie would walk around the block till her legs fell off. Ellie Poo is fearless and knows the world revolves around her, and on the other hand Maddie is a huge chicken who is scared of cats.


They are odd.


Ellie will let you bathe her, trim her nails, and cut her hair like it's nothing. Maddie on the other hand is like bathing and trimming a wild monkey with rabies.


But we love them.

Flourless Chocolate Cake w/ Salted Caramel

I saw Real Simple's tweet yesterday for Flourless Chocolate cake and decided to put the most popular food trend on it.  Here is the cake recipe.


 Flourless Chocolate Cake w/ Salted Caramel


Flourless Chocolate Cake Recipe:

Ingredients

Directions

  1. Heat oven to 350° F. Butter a 9-inch springform pan and dust with cocoa powder.
  2. In a medium saucepan, heat the butter with ¼ cup of the heavy cream over medium-low heat until the butter is melted. Add the chocolate and stir until melted and smooth; remove from heat.
  3. In a medium bowl, whisk together the eggs, granulated sugar, and cocoa powder; whisk in the chocolate mixture.
  4. Transfer the batter to the prepared pan and bake until puffed and set, 35 to 40 minutes. Let cool in the pan for 1 hour. Run a knife around the edge of the cake before unmolding.
  5. Using an electric mixer, beat the remaining 1 cup of heavy cream with the crème fraîche and confectioners’ sugar until soft peaks form. Dust the cake with confectioners’ sugar and serve with the whipped cream.
Salted Caramel:
**caramel adapted from Souffle Bombay

6 TBS heavy cream
1 tsp sea salt
1/4 cup water
1 1/4 cup sugar
2 TBS corn syrup
2 TBS unsalted butter
Dash or two of vanilla

In a small bowl combine cream and sea salt, stir well.
In a small saucepan add water, then sugar and corn syrup. Stir together just a bit. Cook over medium high heat...undisturbed for about 10 minutes...every so often you can swirl pan but do not stir. Sauce will begin to turn amber. Swirl your sauce every so often and keep on heat until it has a nice amber color...maybe another 3-6 minutes. Carefully remove from heat, quickly whisk in the cream mixture - be careful as sauce can expand quickly...be sure you are whisking while your pour in the cream. Scrape any bits of salt from the bottom of the bowl and add to your sauce. Stir in butter and vanilla...let sauce come to room temperature.

So so so so so good! I actually think I like flourless cake better than regular chocolate cake.

{Something I've learned}


Day 24
Not all southern women are born with the innate ability to constantly speak in a whisper. I for one am a loud mouth, who teaches loud, talks louder, and can blow a kid out of the water with my yell/whistle combo at recess...and sometimes inside if need be.


My envisioned life will not occur now, or next year. Maybe not even the next. I want to have the perfect southern house to decorate and let it be a reflection of me. But that my dear is not going to happen in this town...or in any other for the next few years. We can not possibly commit to buying anything right now, and not because of money, we just want to travel and do other things that aren't in North Louisiana. 


Just because I didn't turn in an assignment on time does not mean it is not still due. In graduate school it likely means someone is about to hunt me down to get my work. Just because it is not up on TaskStream does not mean you don't have to do it now...it will eventually be up and you will eventually be late turning it in.


I am apparently odd for my part of the country. I eat whole wheat. I drink Kombucha. I wear a Power Balance bracelet. And I exercise. All of those things apparently mean I am on a "diet" and not that I eat healthy. Which is quite hard to do by the way when the person next to you at lunch daily is eating 30 lbs of butter and white processed food. I just know my families health history and don't want to be overweight, die of heart disease, have high blood pressure/cholesterol, or have a lard induced type of cancer or stroke. This all makes me feel like some weird Eastern medicine loving hippie.


I don't have to wear makeup to be pretty. I am a jeans and t-shirt kind of gal and proud of it.

I got a bit lazy last night...as in went to Zumba after work, cooked dinner, then passed out cold by 9:30. We didn't even have to work today and I planned on staying up late, that didn't work out as planned.

 This was/is my favorite bridal picture. After doing engagements with Katie May{and her little lesson on how to not smile in a pic} I decided to not smile in my bridals. Mom & Nanny weren't to happy with that decision, but I liked the way they turned out. I tend to smile in every picture, so it was nice to have another facial expression.

London. But I have a feeling most of you have picked up on that already. If someone kidnapped me and took me there I would be very unhappy if I were ever found. I have dreamed of dropping everything here and running away to that place.
